Edelweiss Mountain Deli History and Position Summary:
Edelweiss Mountain Deli is where old friends from Stowe and around the world connect around outdoor adventure, and local food and beverages. First built as a one room schoolhouse serving the Luce Hill area back in the 1830’s, the building was purchased and moved in 1940 to its present location on the Mountain Road. In 1968, the building and land were purchased by Swiss ski instructors who founded Edelweiss and set it on its course. 52 years later, this local institution serves Stowe while honoring its legacy as a place where community is built one conversation at a time.

Vermont is a special place with an agrarian legacy that cultivates a culture of innovation and a commitment to local, high quality, craft endeavors. This culture has nurtured many remarkable family-owned food and beverage entrepreneurial success stories. 185 years after the one room school-house was built, Edelweiss today has a mission of sharing Vermont at its finest.

Edelweiss is a specialty food and beverage retailer with a significant commitment to prepared food. It is and always has been a to go / curbside business. Historically lunch-focused, new owners have recently made significant strategic financial and operational commitments to the breakfast and dinner business. The new role of Executive Chef represents a unique opportunity for the right person to quickly build upon and significantly enhance our reputation – and by extension their professional reputation - in Vermont’s most global market. In close partnership with the owners, s/he will be responsible for strengthening the excellence and expanding the inherent promise (creativity, quality, freshness, presentation and affordability) of our prepared food. In turn, the other assets of the business can be creatively leveraged in ways that catalyze connecting with, building and supporting our community.

General Expectations:
1.        Demonstrate an understanding of the business strategy/model (beyond culinary) and culinary concept providing proactive counsel and guidance to the owners/management. Recognize that first and foremost, our business is to safeguard public health while delighting guests.
2.        Be responsible for direction and administration of the planning, preparation, production and direction of the culinary operations at Edelweiss Mountain Deli.
3.        Employ an outside-in perspective informed by strategy and culinary concept, beginning with customer expectations, needs, and wants.
4.        Ensure that all guests feel welcome and are given responsive and gracious service.
5.        Serve as trusted counsel, supporting team members and fostering opportunities that allow others to learn, grow, and develop their abilities.
6.        Practice and advocate sound financial/business decision making that balances customer focus / deep commitment to the ultimate guest experience.
7.        Support the development/implementation of an integrated health, safety, food handling culture underpinned by ongoing documentation and training.
8.        Engage guests and team members on a regular basis to obtain/document feedback on food quality, presentation, and service, and respond to/resolve guest problems and complaints in a timely manner.

Major Duties:
1.        Co-develop culinary strategy and provide leadership for day-to-day kitchen operations
2.        Model professional and contemporary culinary leadership behavior including respect, inclusivity, sense of humor and a willingness to perform all activities necessary to organizational success
3.        Communicate and use documented tools such as order guides, prep lists, and recipes/methods.
4.        Recognize superior quality products (with default to local where possible and practicable), presentations, and flavor.
5.        Teach and mentor team members the fundamentals of good cooking/preparation according to well defined recipes/methods, and discuss continuous improvement of the cuisine.
6.        Train, develop, and motivate team members to meet and exceed established food preparation/excellent “plate” presentation standards on a consistent basis and assist with the creation of creative, and decorative food displays.
7.        Model compliance with and follow proper food handling and sanitation standards.
8.        Review finished products for quality and presentation consistency before the food is available to guests.
9.        Maintain updated/accurate costing of all dishes prepared and sold in the operation.
10.        Responsible for knowing about / ensuring all kitchen equipment is properly / regularly maintained in accordance with local health department and restaurant standards.
11.        Schedules / leads regular kitchen/bakery deep cleaning (equipment, walls, ceilings, floors, etc.).
12.        Ensure proper purchasing, receiving, and food storage standards are taking place in the kitchen.
13.        Understand team member positions well enough to perform duties in their absence.
14.        Co-develop a catering strategy and capability.

Qualifications:
•        A minimum of 6 years’ experience in a culinary / fast paced kitchen environment.
•        At least 2 years in a management capacity (e.g. manager, executive or sous chef).
•        Can work in a standing position for long periods of time (minimum of 12 hours / day).
•        Must have the stamina to work a minimum of 60 hours per week.
•        Can reach, bend, stoop and frequently lift up to 50 pounds.
•        Candidates with experience with or vision of developing a catering business is preferred.
